So… I made my own…
It’s best to spend 2 days on this project or devote a whole day to prep, cool, then drink.
- coconut milk in the can (I got mine at Trader Joe’s)
- coconut beverage (Trader Joe’s)
- regular milk
- tapioca pearls
- crushed ice
I diced the watermelon, honeydew, and mango into teeny tiny pieces (small enough that they can go through a bubble tea straw).
For the coconut milk, I boiled 2 cups of the coconut beverage, and added 1/2 cup of sugar. Then I reduced the heat, and added 1 can of coconut milk, and 1 cup of regular milk. I let it cool. It is best to serve it a little warm. The coconut milk has a cream layer that hardens when it cools. So it is best to pour slightly warm milk over crushed ice when serving.
For the tapioca pearls, I placed 1/2 cup of pearls into boiling water. I stirred until they became translucent (about 7 minutes). Then I poured out the boiling water, added cold water, and let them soak until serving.
To serve: I added a few spoonfuls of tapioca pearls to large cup, then added a few spoonfuls of crushed ice. Then, I poured slightly warm coconut milk mixture about 3/4 of the way. Then, I topped the cup off with spoonfuls of the chopped fruit. It was heavenly.
